This Clear Creek Abbey beef comes from animals that are grass fed and grass finished. They are on average two years and are brought to their prime weight. This ensures lean and tender meat. We support a small Oklahoma processor that is family-owned and operated. They have high standards for their work and do an excellent job processing and packaging our meat. Our ground beef typically has a meat to fat ratio of 85/15, which makes it versatile for everything from burgers to chili and tacos. There are not added flavorings, preservatives, water or extra fillers to the beef and so there is little shrinkage when cooking. We do ask the butcher to add some fat from one of our grass-fed animals back into the meat because it is so lean to make for easier cooking. There has been a lot of interest in this meat.
